Frogs Legs Amandine

6 pairs Frog's legs
1/2 cup milk
1/2 cup plain flour
salt and pepper
4 tbls oil
1tsp lemon juice
2 oz butter
1 cup slivered toasted almonds
1 tbls chopped parsley
slices lemon.

Method

Soak the frog's legs in cold water for 2 hours, drain and dry thoroughly. Dip them in the milk and them in the flour seasoned with salt and pepper. Heat the oil in a frying pan and cook the legs for 7-10 minutes. Transfer to a serving dish, seasoning with salt, pepper and the lemon juice. Cook the butter until it is nut brown and pour it over the legs. Scatter the almonds over and sprinkle with the parsley. Garnish with the slices of lemon.
