 Mayonnaise Salad Dressing

 






Maple Syrup & Mustard Marinade For Fish

for white-fleshed or oily fish

2 tbls maple syrup
1 tbls seeded mustard
1 tbls soy sauce
Combine ingredients in a bowl and mix well..


Lemon & Herb Marinade For Fish

this can be used for all fish and shellfish.

1 tbsp fresh thyme
2 tbsp chopped fresh rosemary
grated rind of 1 lemon
1/4 cup lemon juice
1/4 cup olive oil
2 cloves garlic, chopped.

combine ingredients in food processor or blender until smooth.


Asian Marinade For Fish

Use with oily or white-fleshed fish fillets, steaks or cutlets, prawns, cuttlefish and squid (calamari).

1/2 cup hoisin sauce
1/4 cup tomato sauce (ketchup)
1/4 cup lemon juice
2 tbsp honey
2 tbsp soy sauce
3 tbsp chopped spring onions
1/4 tsp cracked pepper

Combine hoisin sauce, tomato sauce, juice,honey,soy sauce, spring onions and pepper and mix well.



Japanese Marinade For Fish

Use white-fleshed or oily fish fillets, prawns, octopus or squid.

1/3 cup soy sauce
1/4 cup mirin or sake
2 tbsp sesame oil
1 tbsp brown sugar
3 tbsp chopped spring onoins
1 clove garlic, chopped.

Combine all ingredients and mix well.



Tandoori Marinade For Fish

Use for whole fish, fish fillets, cutlets or prawns.

1/2 cup plain yoghurt
3 cloves garlic, chopped
2 tsp ground ginger
1/2 tsp chilli powder
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp garam masala
1/2 tsp paprika
1/2 tsp tumeric.

Combine all ingredients and mix well.



Thai - Style Marinade For Fish

Use white-fleshed or oily fish fillets, prawns, cuttlefish, octopus or squid.

2 cloves garlic, chopped
2 tbsp fish sauce
1/3 cup chopped fresh coriander leaves
2 tbsp chopped lemongrass
2 tbsp chopped fresh mint
1/3 cup lime juice
2 tbsp sweet chilli sauce.

Combine all ingredients and mix well.


Sour Cream Marinade For Fish
For all fish and shell fish.

1/2 cup sour cream
1/4 cup lemon juice
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp cinnamon
1 clove garlic, chopped

Combine all ingredients and mix well.



Spicy Yoghurt Marinade For Fish

For white-fleshed fish fillets,prawns, squid and octopus.

2/3 cup plain yoghurt
2 cloves garlic, chopped
2 tsp chopped fresh ginger
2 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
1 red chilli, chopped and seeded.

Combine all ingredients and mix well.



Lemon & Rosemary Marinade For Fish

For whole fish, make sure fish is scored.

1/4 cup olive oil
1/4 cup lemon juice
2 bay leaves, crushed
2 cloves garlic, chopped
1 tbsp  chopped fresh rosemary
1/4 tsp cracked pepper

Combine all ingredients in a food processor or blender and mix well.


Peppered Wine Marinade For Fish

For white-fleshed or oily fish fillets, steaks or cutlets,prawns, cuttlefish, or squid.

1 cup dry white wine
1/2 cup olive oil
2 tsp crushed pepper
grated rind of 1 lemon
2 tbsp chopped fresh parsley
2 cloves garlic, chopped

Combine all ingredients in a bowl and mix well.



Tropical Marinade For Fish
for white-fleshed or oily fish..

1/4 cup olive oil
1 cup orange juice
1/2 cup pineapple juice
1 tsp chopped fresh ginger
2 tbsp chopped fresh mint

Mix all ingredients in a bowl and mix well.



Lemon & Wine Marinade for Lamb or Chicken
 

2 tbls lemon juice
2 tsp grated lemon rind
1 clove garlic, crushed
1/4 cup white wine
1/4 cup olive oil
2 tbls soft brown sugar
1 tbls chopped rosemary
1 tbls lemon thyme.

Combine all the ingredients in a bowl and mix well.


Teriyaki Marinade For Beef or Lamb
1/4 cup soy sauce
2 tblsp teriyaki sauce
3 tsp grated fresh ginger
1-2 cloves garlic, crushed
2 tblsp soft brown sugar
1/4 cup chicken or beef stock
2-3 tblsp sweet sherry

Combine all the ingredients and combine well.


Spiced Yoghurt Marinade For Beef or Lamb
 

1 cup plain yoghurt
1 onion finely chopped
3/4 tsp ground coriander
3/4 tsp ground cumin
3/4 tsp garam masala
3/4 tsp ground cinnamon
1/2 tsp ground ginger
1 tsp sugar
1 clove garlic, crushed
salt and pepper to taste
pinch cardamom.

Combine all ingredients in a bowl and mix well.



Apricot & Onion Marinade For Pork or Chicken

1/3 cup Apricot nectar
1 tsp Worcestershire sauce
1 tblsp oil
1 tblsp malt vinegar
1-2 tblsp French onion soup mix
2-3 spring onions, finely sliced
1/4 cup red or white wine (optional)

Combine all the ingredients in a bowl and mix well.



Mustard & Herb Marinade For Beef or Lamb

1/4 cup olive oil
2 tblsp balsamic vinegar
2 tsp soft brown sugar
2-3 tsp Dijon, German or wholegrain mustard
1-2 tsp mixed dried herbs
1 tblsp chopped fresh parsley
salt & pepper to taste.

Combine all the ingredients in a bowl and mix well.



JDsAspen's Marinade No.1 For Beef or Lamb
 

3 Cups Cantelope (Rock Melon)
3 small tomatos
1/2 BBQ sauce
Generous dash of Teriyaki sauce
Generous dash of Garlic & sweet chilli sauce.

Method

Place Cantelope in food processer grind up, add BBQ sauce , Teriyaki sauce,& Garlic & sweet chilli sauce.Blend well add tomatoes & blend up . Pour over meat & marinade in Fridge for aleast 3 hours.



JDsAspen's Marinade No.2 For Beef or Lamb

Generous dash of bbq sauce
generous dash of worcestershire sauce
generous dash of teriyaki sauce
5ozs olive oil
3 tbs Hickory Liquid Smoke
2 cloves garlic, Crushed

Method

Mix all ingredients well in blender or food processor. Marinate beef or lamb minimum 30 minutes per side.


JDsAspen's Marinade No.3 For Beef or Lamb

1/4 green bell pepper, diced
1 onion, diced
generous dash Teriyaki Marinade
generous dash garlic juice
2 medium tomatoes, diced
1/2 cup Homemade tomato sauce (Recipe available on our recipe page)
generous dash ginger,garlic and chilli sauce
1 tbsp American mustard
1 tsp lamb seasoning
1 tbsp chicken seasoning

Method

Combine all ingredients in a blender or food processor and blend until smooth.




Mayonnaise Salad Dressing

2 medium-sized onions, diced
2 cloves garlic, crushed
14 flozs strong chicken stock
1 bay leaf
10 flozs white vinegar
4 egg yolks
2 tsp French mustard
2-1/2 pints olive oil
2 tsp worcestershire sauce
salt and freshly ground pepper

Method

Put the onions, garlic, stock,bay leaf and vinegar into a large saucepan and boil for 30 minutes. Remove from the het, take out bay leaf and allow the mixture to cool. Put it in a blender, blend at high speed and then set aside. Beat the egg yolks and mustard together in a mixer at slow speed until they are creamy. Very slowly, a little by little, add the oil. This will make a very heavy mayonnaise. Slowly add the cold pureed stock and continue to mix. Keep adding the stock gradually, you will notice if the mayonnaise is absorbing it; if not, reduce the amount of stock you are trickling in. Finally when all the stock has been combined with the egg mixture, add the Worcestershire sauce and season with salt and pepper to taste.
