Guacamole Dip

In a glass or stainless steel bowl, mix together:
flesh of two pounds of avocadoes, 2 or 3 cups
1/4 to 1/2 cup chile,
3 clove garlic, minced
1/2 medium onion, fine chop
Juice of one lemon or two limes, more or less
3 tsp dry leaf oregano
1 tsp freshly crushed cumin seed
bit of salt and pepper

Method

Mix well together, sprinkle a little more lemon or lime juice over the top to keep it from darkening, and let mellow for an hour or two. Serve with chips or tostados, slices of lemon or lime, a bit more oregano, fresh cilantro and any kind of chile imaginable. 


John Denver's Crab Dip

This is Johns own recipe for his crab dip as served at the Tower Restaurant in Aspen Colorado.

8 oz. cream cheese
2 Tbs.. Worcestershire sauce
2 Tbs.. mayonnaise
1 tsp. lemon juice
1/4 c. minced onion
1 can crab meat
1/2 bottle chili sauce

Method

Mix cream cheese, Worcestershire sauce, mayonnaise,lemon juice and onions. Spread on serving tray. Cover with crab meat and chili sauce. May garnish with parsley. Serve
with crackers


Easy Slow Cooker French Dip
 

 This makes a delicious French dip sandwich, perfect for the working mom! Nobody, not even teetotalers, have been able to detect the presence of beer in this recipe, but it adds a wonderful flavor! French fries make a great side dish, and they are good for dipping, too. "

 1 (3 pound) rump roast
 1 (10.5 ounce) can beef broth
 1 (10.5 ounce) can condensed French onion soup
 1 (12 ounce) can beer
 8 French rolls
butter or margarine - as needed, optional

  Method

   Trim excess fat from the rump roast and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on low setting for 7 hours Preheat oven to 350 degrees F (175 degrees C). Split the rolls and spread them with the butter or margarine, if desired. Bake them at 350 degrees F (170 degrees C) for 10 minutes.Slice the meat on the diagonal and place on the rolls. Serve the sauce for dipping. 



Avocado Dip

Mix together:
8 ozs cream cheese
1/2 cup sour cream
1 avocado, stone removed, peeled and mashed
1 clove garlic, crushed.



Salmon Dip

Mix together:
8 ozs Cream cheese
16 oz can pink Salmon, drained
2 spring onions, finely chopped
1 tbsp lemon juice.



Fresh Garden Dip

Mix together:
8 ozs cream cheese
1/2 cup sour cream
1 spring onion, finely chopped
1/2 cup grated carrot
1/2 cup grated zucchini
2 tsp lemon juice.



Chive Dip

Mix together:
8 ozs cream cheese
2 tbsp mayonnaise
1/2 cup sour cream
2 tbsp snipped fresh chives.



Mexican Dip

Mix together:
8 ozs cream cheese
1/2 cup sour cream
1/3 cup taco sauce ( medium or hot)
1 tbsp chopped fresh parsley.



Ham and Pineapple Dip

Mix together:
8 ozs cream cheese
2 spring onions, finely chopped
4 slices ham, shredded
1/2 cup crushed canned pineapple or chopped fresh pineapple
1/2 red pepper, roughly chopped.



Greek Cucumber Dip

Mix together:
8 ozs cream cheese
1 cucumber, peeled, seeded and grated
1 clove garlic, crushed
1 tbsp finely chopped mint.
