onions, diced Method Put the onions, garlic, stock,bay leaf and vinegar into a large saucepan and boil for 30 minutes. Remove from the het, take out bay leaf and allow the mixture to cool. Put it in a blender, blend at high speed and then set aside. Beat the egg yolks and mustard together in a mixer at slow speed until they are creamy. Very slowly, a little by little, add the oil. This will make a very heavy mayonnaise. Slowly add the cold pureed stock and continue to mix. Keep adding the stock gradually, you will notice if the mayonnaise is absorbing it; if not, reduce the amount of stock you are trickling in. Finally when all the stock has been combined with the egg mixture, add the Worcestershire sauce and season with salt and pepper to taste. |
